About Tim Mikeska:
Tim Mikeska is CEO of Mikeska's Bar-B-Q Inc. and owns Mikeska Brands USA. Raised in Taylor Texas, and son of famed restaurateurs Rudy and Joy Mikeska, Tim learned to cook at an early age and grew up making sausage and catering Texas Bar-B-Q with his father. Tim has served US Presidents, US Congress, Texas Governors, British Royalty, Texas Legislature, actors and famous musicians throughout the United States. He has also served his Texas Bar-B-Q in England, Germany, Bosnia, and Canada. Tim has been featured on the Food Network's Food Nations program with Chef Bobby Flay, The Travel Channel with Andrew Zimmern, the CBS Early Show, and was a star and 2 time Emmy winner on the PBS Emmy Award Documentary. "Masters of Texas Barbecue" along with 6 books about Texas Bar-B-Q. Some of Tim's proudest moments were traveling to Bosnia to serve his Bar-B-Q to U.S. Peacekeepers on July 4th and to Texas Task Force One upon their return from New York and rescue operations at the World Trade Center. He also served the 4th Infantry Division upon their return to Texas after capturing Saddam Hussein and donated a feast for over 3,000 Texas National Guard Soldiers and their families upon their return from active duty in Europe. For these accomplishments, Tim received the prestigious "Texas Eagle Award" from the Texas Military Forces and "The Seven Seals Award" from the United States Military representing all seven branches of the US military forces. Tim Mikeska was inducted into the Meat Cutters Club of America and the BBQ Central Hall of Fame.. A servant to his church and his community, Tim has served on the Taylor City Council, The Williamson County Health District Board, The Economic Development Committee, and President of the Taylor Chamber of Commerce. He is CEO of Mustang Creek Golf Course, founded in 1914, which is the 14th oldest golf course in Texas. Tim Mikeska was one of the fist EMT-Paramedics in Texas who was also an Instructor and Adjunct Professor for Emergency Medical Services teaching over 600 EMT's and Paramedics. He founded the East Williamson County Emergency Care Team as one of the first, first responder organizations in Texas. In 1982, he created Taylor Heartsaver, a program that taught CPR to over 400 citizens of east Williamson County. Now, 40 years later, Taylor Heartsaver LLC has returned to teach the citizens of his hometown CPR, Heartsaver, Heartcode, First Aid, Naloxone Administration, AED and OSHA environmental medical emergencies. In 2020, after almost 45 years on the ocean in various vessels, he graduated as a United States Coast Guard Licensed Captain with a Master Rating. In 2023, he became a Command Pilot with Angel Flight South Central, Air Care Alliance and Pilots N Paws, using his aircraft to support patients in need of medical transportation flights and for animals that needed to transportation to their forever homes.

Tim Mikeska's paternal grandparents, Mikeska and Valis, immigrated from the old Czech land of Moravia in the 1880's. His maternal great grandparents, Marshall and Hood, came to Texas many years before. Their history dates back to the 16th century in America. The Mikeska Family had 9 children who were all raised in the Taylor Texas area. They went on to make history as "The First Family of Texas Barbecue" Being the son of Rudy and Joy Marshall Mikeska allowed Tim to learn a whole host of skills. Butchery, BBQ and Catering from his dad, and Food Service, Cooking and Golf from his mom. In 2010 Tim qualified for the PGA Bridgestone Senior Series profession golf tour. In 2015, Tim Mikeska was inducted into the Meat Cutters Club of America Hall of Fame. In 2021 he was chosen for the BBQ Central Hall of Fame.
2020 Personal Update
In 2020, I turned 60. A milestone I didn’t think I would reach. With renewed energy, I refocused my private life to support great causes. My hometown, Taylor Texas is very dear to my heart. I love to support a community that my family has been a part of for over 130 years. I have used my skills in social media marketing and as a pilot to show the world how special my hometown is. Since 2018, over 250,000 people have viewed my aerial photography of events in my hometown. Car Shows, Patriots Day, Music/Food Festivals, Parades, Economic Expansions, Sports Events and Weather Events are examples of my aerial projects. The fun projects are children’s birthdays when I fly my drones in to play inspirational birthday music. Even letting my drones “dance” for them! All recorded for their lifetime of great memories. My fondness of animals allows my thermal search and rescue drones to look for those unfortunate animals that have lost their way home. Those same search and rescue specialty drones have also been deployed to find lost children. Our community has had some tragic events. I was asked to aerial photograph memorial events and to edit special videography into movies that can be a remembrance of their loved ones. These services are available free to anyone that requests it. In 2021 the creation of Mikeska Coastal Services allows me as a United States Coast Guard Licensed Master Captain, to give those less fortunate, a chance to see the beauty of the ocean and learn about the Texas Bay system and to study aquatic life. Finally, like my parents and grandparents before me, I privately support those in need… financially, spiritually and most importantly, those who are hungry. In 2023, I became a Command Pilot for AIr Care Alliance - Angel Flight and Pilots N Paws, using my aircraft to benefit those in need of medical and rescue transportation. Also in 2023, I became a Minister of Livestream and Visual Media for my church.

The beginning of this unique family started with the courtship of John Mikeska and a young Francis Valis. They both came from large Moravian families who at a very young age immigrated to the United States via Galveston Texas. The Valis family took roots in the central Texas community of Corn Hill. The Mikeska family settled in the fertile farm area around Taylor. They proceeded to have nine children and raised them on a farm three miles south of Taylor. The beginning of the Mikeska Family's meat business operations began in the 1920's when John Mikeska was the leader of what was called a "beef club." John was a 3rd generation butcher with extraordinary skills with handling every type of animal. He and his six young sons, went to other area family farms and processed cattle, hogs, goats, chickens, and sheep. Their payment for these services was the allotment of certain meat cuts for themselves. The Mikeska Family's hospitality and their devotion to hard work became synonymous in central Texas. In addition to their beef club, John Mikeska raised cotton, corn, maize and wheat.
The Mikeska children learned at an early age that to be successful you had to establish your name and maintain the core values that their parents instilled in them. The beginning of the retail food business began when Rudy Mikeska, 3rd son of John, as a young 16 year old, managed the retail meat market at Speegle Grocery store in downtown Taylor Texas. He was tasked as a Meat and Dairy inspector in the US Army Veterinary Corp during World War II. He returned from World War II to manage the Taylor Country Club. There, he began the catering business that is still in operation today with over 1,600 annual events. While at the Country Club, Rudy became famous for some of his "high profile" clients. Then Senator and later President Lyndon Johnson, State Senators, US Congressman, Hollywood Actors, and The British Royal Family all became clients and friends to Rudy Mikeska. The Mikeska Family brothers used their butchering skills to open meat markets in Georgetown, Round Rock, Bastrop Rosenberg, El Campo and Wharton Texas.
Rudy's brothers also came into the business in the 1950's and 1960's. Mike Mikeska opened meat markets and later Bar-B-Q's in Smithville, Jerry opened one in Columbus, Louis in Temple, Maurice in El Campo and finally Clem in Temple. Each brother had their own style and recipe for their product. The one quality that was the same in all of the Mikeska businesses was "service." As each of the businesses grew, the brothers expanded to meet the growing necessity of their reputation. Rudy Mikeska had three barbecue stands in Taylor and the famous "L&M" restaurant in nearby Georgetown. Rudy worked 18 to 20 hours a day nourishing his customers and staff. In 1971, he combined all of his businesses into one massive restaurant and catering complex in Taylor. That complex can produce meals for over 3,000 people every hour! State-of-the-art "Roto-Flex-Smokers" that can hold 1,000 lbs of product are lined 4 abreast in his catering kitchen. Steam kettles that can hold 240 gallons of either sauce or beans round out the kitchens ability to produce immense quantities of food. Rudy designed his own glazed brick oak wood smoker that can smoke 1,000 lbs of sausage or hams. A fleet of 11 vehicles keeps the catering operation on the road every day of the week. Rudy has two large trailer Bar-B-Q pits that can cook on location anywhere in the United States. It was his ability, along with his dear brothers, that led to Texas Monthly Magazine naming the Mikeska Family......

The Second Generation
Thankfully, the second generation of the Mikeska Family realized early on that they had a unique heritage. Each brothers children showed a keen interest in the operations of each location. They all grew up making sausage and catering with their father. The Mikeska Family had 3 girls. They, and their children also entered the food business. Ann Mikeska Jozwiak owned and operated the Diamond Inn for 50 years. This cafe was featured in the movies... "Hot Spot," "Perfect World," and "Heart Break Hotel." Val Mikeska Lindeman helps manage her brother Clem's operations in Temple. Martha Mikeska Vanecek's children Benny and Michael saw their uncles achievements and began buying McDonalds franchises. They both are highly respected and successful in their own right. Both Vanecek brothers were on the National Operating Board of Directors for McDonalds Corporation. Rudy's children.... Judy and Tim both directed the core of the family corporations based in Taylor. Maurice's children.... Laurice, Nick and Gerry run the El Campo operations. Clem's children.... Angela, Anna and Stephen manage the Temple locations. The Mikeska cousins are well educated and prepared to take the family business into the next century. They are dedicated to maintaining the family legacy and the spirit of their grandparents and parents. They confer on a daily basis to pool their vast resources in developing new creative menus and products. In 1996, The Baylor University Institute for Family Business named the family's holding corporation, Mikeska's Bar-B-Q Inc., as Semi-finalist for Outstanding Family Business of the Year. They achieved distinction over 300 other family owned businesses in Texas. This accomplishment epitomizes the tradition of the Mikeska Family, the fulfillment of a loving, traditional Czech - Texan clan. In 1989, The Mikeska Family was honored by The Texas State Legislature with an Honorary Resolution marking the loss of Rudy Mikeska Sr.
Rudy Mikeska Sr.
Volumes can be written about the founder of the Bar-B-Q Empire, Rudy Mikeska Sr. (1920-1989) Rudy was known throughout Texas as a "people person" dedicated to making every event he touched a glorious occasion. Rudy would counsel young couples in preparing their wedding. He wanted everything to be perfect, especially the food. That tradition continues today. Rudy Mikeska's Bar-B-Q Inc. in Taylor is now catering the weddings of grandchildren of previous customers. Rudy Mikeska coordinated large catered events like the IBM Family Day for 21,000 guests. The South Texas Nuclear project for 18,000 guests.
He personally catered for US Presidents.... Lyndon Johnson, Gerald Ford and Ronald Reagan. He served 3 Texas Governor Inaugurals, the caterer of choice for Texas State Legislature, and provided the meals for the last 11 Texas State Governor-for-a-Day events. The most important thing that can be said about Rudy Mikeska was his charity and love for his fellow man and his family. Rudy, in his 44-year career, never turned anyone away hungry. He knew hunger very well. He donated over $50,000 in food yearly to many deserving charities.

As President and Chairman of the Board of Mikeska's Bar-B-Q Inc., Tim has followed in his fathers footsteps in preserving his family heritage and name. His father trained him from the age of 7 to cut meat and make sausage. By the age of 12 he was able to break down large beef carcass and sort out the different cuts of meat. Tim spent the next 20 years working side by side with his legendary father. Rudy Mikeska passed not only his love of the business to his family, he passed his legacy. Rudy Mikeska left this earth in August of 1989. Since then, Tim has taken great steps in expanding the company's ability to cater large functions and travel great distances. He has expanded their menus to include USDA Prime Steaks, Farm Raised Catfish, Chicken Fried Steaks, Beef Center Cut Medallions, Pork Tenderloin, Baby Back Ribs and exotic meats like Quail, Pheasant, and Whole-Suckling Pigs. Tim is also copyright/trademark holder, and guardian of the Mikeska Family Trademarks. He has brought the company into the 21st Century by selling "Mikeska Brand" products all over the world.
Tim raised awareness of his company and it's accomplishments by being featured on numerous network and cable television programs. Tim was featured on the FoodNetworks, Food Nations Program with chef host Bobby Flay. He stared in the Emmy award winning "Masters of Texas Barbecue" PBS, Travel Channel and Discovery Channel feature. Tim, along with his El Campo cousins, was featured on Memorial Day in New York on the CBS Early Show. Tim and his son Timothy was featured twice on the Travel Channel with Chef Andrew Zimmern in 2009 and 2010.
The most amazing thing about his accomplishments is his ability to do these events as far away as Bosnia, Germany, Ireland, Iceland, Canada, England, Italy, New Jersey, Washington, California, Nevada, Arizona and Florida.

The one thing that Tim prides himself on, is his continuation of producing the sausage that is still being served all across the US. This is the same sausage that Rudy Sr. began making in the 1940's. Tim started making sausage with his father when he was only 7 years old. He literally had to stack old wooden Coke crates to stand on to reach the linking table. That same sausage is now being shipped to 26 US states. His skills as a butcher earned him the Master Butcher and Master Sausage Maker from his peers in 2012.
Tim has focused his future business with his new company, Mikeska Brands USA. A company that manufactures USDA Certified Smoked Meats currently distributed to 26 U.S. States. Some of the most popular BBQ restaurants in the country now use Mikeska Brand products. Including the immensely popular Smoque BBQ in Chicago.
In 2013 Tim Mikeska was honored to be inducted into the Meat Cutters Hall of Fame! In 2021 He was honored to be inducted into the BBQ Central Hall of Fame.
Tim spends his days away from home butchering, smoking and packaging beef and exotic game for his families V-Bharre ranch in the Texas Hill Country. Going back to his early roots as a butcher and meat cutter, Tim continues his family legacy as a 5th generation butcher. A skill he loves to express in safe handling of meat and customer satisfaction. The exotic animals that are harvested at the ranch are processed and shipped to customers all over the US. Tim has added the butchering and processing of 14 different exotic game animals to his skill set. From large game like Bison, Sable, Elk, Oryx, Wildebeast, Gemsbok and Nilgai, to smaller game like Black Buck Antelope, Lechwe, smaller deer species... Tim has enjoyed processing all of them... His first job in his dad's business was deboning chicken in 1966... and almost 50 years later... he still has a knife in his hand, and that makes him very happy.
